IT’S healthy eating week (10-14 June) so why not try this healthy quiche? It’s low in fat, full of vegetables and is perfect for a packed lunch or evening meal.
The great thing about this recipe is that you can make it using whatever ingredients you like. We have it with vegetables and occasionally meat-free sausages, but you can also include sausages, bacon or tuna. You can add a sprinkling of cheese on top or to the egg and cottage cheese mixture.
It’s simple to make and tastes delicious.
300g fat-free cottage cheese
Any vegetables. We use onions, peppers, peas, sweetcorn, carrots and green beans.
Heat the oven to 200C /180C fan/ gas 6.
Prepare and chop the vegetables.
Roast the onions and peppers using Fry Light, an alternative to cooking oils and fats.
Boil the mixed vegetables (peas, sweetcorn, peas, green beans).
Place the cooked vegetables into an oven dish.
Beat the eggs
Mix in the cottage cheese.
Pour the mixture over the vegetables.
Bake for 40 minutes until it’s golden brown on top.
Serve hot or cold with salad.
